After the second distillation, the “heart” of the liquid is kept in stainless steel tanks for over 10 months before being bottled. This allows the liquid to rest, producing an unaged tequila that is bold, balanced and smooth.

Chinaco Añejo is meticulously aged two and a half to three years in oak barrels. Chinaco is additive free and does not add caramel coloring, oak extract, glycerin or sugar to manipulate its tequila.
The first sniffings find very delicate scents of dill, sage, and olive brine; in later whiffs a fine creaminess is discerned. The palate entry is crisply astringent and vegetal; at midpalate there is a butteriness bordering on toffee/caramel. Ends up clean.

Rey Campero’s Mexicano is produced from maguey Mexicano. This mezcal tastes of smoked wood, dry grass, and cafe espresso. Romulo Sanchez Parada continues to hone his craft, and he seems to improve with every batch. This is traditionally produced and distilled in copper.
Rey Campero Pechuga de Codorniz is a unique mezcal pechuga composed of quail, pineapple, banana, and corn cobs.
Rey Campero Tobala is made from wild and semi-cultivated agave harvested in and around Candelaria Yegolé, Oaxaca. Notes of leather, wood, and jalapeño.
Rey Campero Jabali is made with maguey Jabali. The flavor of this mezcal has lots of tropical fruit and citrus. It is earthy with a hint of pepper. Its richly textured and the smoke frames the wild flavors of this special agave.
Rey Campero Tepextate is made from wild Tepextate that has matured 15-18 years before harvest. Agave, spices, light acidity, bitterness (grapefruit & orange peel), nutmeg & pepper.
Casamigos Mezcal is balanced and elegant, offering harmonious hints of tamarind, pomegranate, banana and mango. Fresh herbal mint aromas, dried oregano and thyme lend character to the mezcal. The delicate tones of smoke, hints of licorice and mineral nuances lead to a long silky finish.
Clase Azul Mezcal Durango is made from Cenizo Agave, an agave varietal that grows wild in the state of Durango in Northern Mexico.
The combination of mineral-rich soil and water from natural springs give it a distinctive and smoky character with complex flavor notes.
Clase Azul Mezcal Guerrero is a truly unique piece. Beyond its beautiful decanter, its majestic flavor comes from a very rare variety of agave: the papalote agave. This plant grows wild in the mountain ranges in the state of Guerrero, where both the coastal climate and the freshness of green forests come through in its flavor profile.
Made from Espadin, Madrecuixe and Tepextate agave varieties in equal parts. Roasted, crushed, fermented and distilled on-site. We rest the mezcal in the bottle for three years before it is released.
The earthy, rustic flavor profile of this mezcal speaks of the tepextate's long life. Much like a chicken, the older they get the less tender and supple they are. But they begin to take on deeper and more intense flavors. Aromatically it is fresh and herbal and speaks of the earth with notes of mastic, frankincense and apple peel which are mirrored exactly on the palate.
This expression of Fidencio mezcal is exceptionally aromatic and flavorful, with notes of tropical fruit, wildflowers, fresh herbs and spice, backed by the distinctive flavor of roasted agave. Smoke, mineral and pepper notes linger through the finish.
Fidencio Unico is slightly sweet with subtle aromas of charcoal, green apple and pear. It’s made from farm grown agave Espadin.
Tobalá, however, was seen as offering something special, and was often reserved to be distilled alone and in smaller amounts.
It has an earthy, robust scent, like wet clay. The taste is spicy and smoky but not in an overpowering way.
El Jolgorio Pechuga is made using two distillations. On the second distillation, the mezcalero adds locally harvested fruit and spices, such as pineapple, orange, plantains, anise, to name a few. Also on the second distillation, the mezcalero hangs a raw guajolote - a creole turkey rooster of the region - on the inside of the pot still.
This 100% cultivated agave Tobala mezcal has aromas of lemon, green pepper and pear. On the palate, there are notes of citrus, basil, roasted fig, macadamia, and truffle.
Montelobos Pechuga is triple distilled with a turkey breast suspended in the still. The turkey adds a thickness and viscosity as well as additional flavor.
Ilegal Joven is ideal for cocktails and perfect to be sipped on its own. It has deep agave aromas, and hints of green apple, citrus and white pepper.
Ilegal Reposado is aged for 4 months in American oak barrels. It has caramelized pear and bitter orange on the nose, and clove, toffee and hints of vanilla on the palate. The mouth feel is velvety throughout.
Ilegal Anejo is aged for 13 months in a blend of American and French oak. It is gorgeous Mezcal rivaling the world’s finest scotches and cognacs. It has maple, clove, and bitter orange aromas, and dark chocolate and sweet agave on the palate. It is rounded, full, rich. When sipped and savored, this is much softer and smoother than the Reposado. It somewhat resembles the more rustic of the Tequila’s but with the intense Espadin fruit flavor
Marca Negra Dobadan tastes of cooked agave with a touch of molasses and brown sugar, green herbs and grapefruit peel, a slight smoky to a sweet finish.
The Marca Negra Tobala is a burly Mezcal. Certain batches are greater than 50% ABV and there are few mezcals in the US (especially maguey Tobala) with this level of alcohol content. Though the strength of the spirit is unavoidable, the ABV does not overpower this mezcal. There are hints of tropical fruit flavor.
Marca Negra Tepeztate is produced in limited quantities due to the scarcity of the agave Tepeztate. This mezcal is made by Jorge Mendez in San Luis del Rio, Oaxaca using the agave Tepeztate that take between 20-30 years to mature. This has an intense minerality with notes of spicy green peppers, chives, and peat.

The Santa Ana del Rio is made by a two-family team that creates a slightly smoky profile with loads of roasted agave flavor
From Potrero, a remote pueblo in Oaxaca’s Sola de Vega region craft production in an artisanal family distillery agaves wood-roasted in hornos (conical below-ground ovens) milled by hand using mallets in a canoa fermentation with native yeasts in open wooden vats double-distillation in very small wood-fred clay pot stills.
Very smooth, light smoky flavor with a hint of oak. Goes down very easily, leaving an enjoyable warm sensation behind.
The mesquite smokiness becomes focused to something resembling peat in an Islay malt. Elegant, clean, refined, well-structured, with a deep long finish.

Aromas of butterscotch, salinity, green olives, and mackintosh apples. The palate has notes of moth balls, caramel, black licorice, and black pepper.
This was smooth, with no alcohol burn whatsoever. Fruity and floral like banana pudding in a flower market. A nice long allspice finish.
Joven is blend of the finest Blanco and Reposado Tequila that is then aged in exclusive PX wine barrels, resulting in a more mature flavor profile than any other Blanco or Silver on the market. Characteristically smooth, creamy and balanced.
Gracias a Dios Tobala is made with 15-year old Tobalá that is distilled two times. It is vegetal and funky, with rubber notes of smoke and peat; deep and long, nuanced, engaging; smoke rising in strength. It is balanced and complex on the palate, with integration of discreet fruit and spice, and a hint of lime skinlate. It has a vegetal/herbal at fade, with good agave tones and profile; long finish, spicy and deep, minty and slightly tropical.
El Jolgorio Barril delicately balances sweetness, citrus, and a distinct minerality. It is earthy with hints of light smoke.
These fruits are local to Oaxaca and available for a very short time each year. Other ingredients special to this recipe are also added to the still on the second distillation, including raisins, apricots, pineapples, apples, bananas, anise, and almonds, along with a raw turkey breast that is hung inside the still cap.
Real Minero Espadin is clay pot distilled in Santa Catarina Minas. It’s fruity with plum and banana notes, smoke, touches of leafy mint, and sweet chocolate.
Real Minero Espadin y Largo has notes of fresh green herbs, orange blossoms, and wet clay. The two different agave make this feel balanced and round.
A classic expression of the Agave karwinskii family, Barril grows with a shorter stem or trunk below, with a thicker shape to its body but the same bold green bloom on top. This particular Barril is fruitier than most others on the market, packed with notes of pink peppercorn, citrus, and wood.
Real Minero Largo is made with maguey Largo, which is a member of the Agave karwinskii family. Real Minero Largo can be peppery with notes of peanuts and coconut.
